Enzymes modify solid-to-liquid interactions, therefore having more impact on the rock surface than the oil–water interface. The de-adhesion of crude oil from the rock is related to the catalytic effect of the enzymes.

In this paper, we review the progress in understanding enzyme applications in hydrocarbon production, drawn from extensive experimental and field studies.
